NOW "in my kitchen" with ABIMBOLA OMOLADE XI

PUMPKIN  VEGETABLE  STEW


 Since earlier this week I’ve been craving vegetable and I didn’t want to prepare my vegetable the usual way of preparing it using palm oil. So I decided to use vegetable oil and it turned out to be very delicious and decided to share.
Enjoy it.


Ingredients:
• Tomatoes
• Onion 
• Red (scotch bonnet) pepper
• Pumpkin leaves 
• Smoked fish
• Vegetable oil 
• Seasoning cubes 
• Salt

Steps: 
Step 1: Soak the leaves in salt water for about 5 minutes then rinse severally with clean water, Chop and set aside.  
Step 2: Rinse the tomatoes, onion and pepper, Chop and set aside. Remove the bones from the smoked fish, rinse and set aside. 



 Step 2: In a pan, heat up the oil for about 1 minute till hot. Add the chopped onion, chopped pepper and chopped tomatoes. Stir fry for about 7 minutes. Add the cleaned smoked fish, crushed seasoning cubes and salt to taste, stir to combine while crushing the fish with a spoon. leave for about 3 minutes. 




 Step 3: Finally, Add the chopped pumpkin leaves and stir to combine everything. Leave to simmer for 5 minutes then turn off the burner.
